Steak Pitas with Cumin Roasted Tomatoes and Spicy Hummus Recipe


Ingredients

  • 1 lb sirloin steak

  • 1 tbsp cumin

  • 1 tsp red chili flakes

  • 2 tbsp olive oil

  • 4 mini pitas or flatbreads

  • 1 cup roasted cherry tomatoes

  • 1/4 cup tahini

  • 1 tbsp lemon juice

  • 1 garlic clove

  • 2 cups mixed salad greens (arugula, watercress, etc.)

  • 1/4 red onion, thinly sliced

  • Feta cheese, for garnish


Directions

  1. Rub the steak all over with cumin, chili flakes, salt and pepper. Drizzle with 1 tbsp olive oil. Grill to desired doneness, about 4-5 mins per side for medium-rare. Let rest 5 mins.

  2. In a food processor, blend tahini, lemon juice, garlic and a splash of water until smooth. Season with salt.

  3. Toss cherry tomatoes with 1 tbsp olive oil, salt and pepper. Roast at 425F for 15-20 mins until blistered.

  4. Slice steak and assemble pitas with a schmear of hummus, steak slices, roasted tomatoes, greens, red onion and feta.

  5. Serve while steak is warm alongside the pitas stacked on a platter. Perfect for a summer dinner party!
